Jam Doughnut Muffins

I know I am predictable. Each time we have a potluck, I'm bound to look to Nigella Lawson for her dependable recipes. Her dessert recipes never fail for me. I promise the next time I'll explore other chefs as well.

For this month's IHCC's potluck, I'm going to make these simple but yet yummy jam doughnut muffins from Nigella. They may look finicky but trust me, you will be glad you started on this. You will be even more convinced if I tell you that it's so easy that you can make a whole batch of this in no time :)

Much earlier, I've seen a lot of blogger friends making these muffins from Nigella's "How to be a Domestic Goddess". So I'm sure these muffins would turn out well. I'm going to bring this for a friends' tea gathering as there are little kids there too. See my modifications in blue.
 
Ingredients:
 
125ml milk
85ml corn or other veg oil canola oil
1 large egg
½ tsp of vanilla extract
200g self-raising flour
100g caster sugar
12 tsps strawberry jam
100 unsalted butter
150g granulated sugar
 
Method:
  1. Preheat the oven to 190C (375F, gas mark 5) 160 degrees celsius, and oil a muffin tin to within an inch of its life line the muffin tin with muffin cases.
  2. Then beat together the milk, oil, egg and vanilla extract and very, very gently fold the mixture into the flour and caster sugar. Nigella says you don't need to worry about lumps: "If you overbeat, the muffins will be tough".
  3. Put a spoonful of mixture into each cup and then a teaspoonful of jam, and then another spoonful of mix.
  4. Put into the oven and cook for about 20 minutes until gloriously risen.
  5. Then melt some butter and put the granulated sugar onto a plate. Roll the muffins in the butter and then in the sugar. Absurd but delicious.
I must say that indeed Nigella's tips work. They cannot be overbeaten, if not, you will have a tough muffin :( I folded the batter in till most of the flour is folden but though I saw streaks of flour, I just left it. That is very unusual for my OCD self. LOL!!

I would say that these jam doughnut muffins definitely don't look perfect. As imperfect as they look, they sure taste yummy for a simple tea treat. Try it if you want to have something for tea but yet, not wash gazillion things. Yes that is the lazy me you are seeing :P
